Course Overview
-

This is an industry qualification that is recognised worldwide. This course will build on your existing skills and experience and is aimed at applicants who have either completed a Level 1 course (or equivalent) or who have experience of working in a professional kitchen. 


Develop your front of house and kitchen skills as you explore advanced cooking subjects and techniques; ensuring you are prepared for employment or further study. You will study dynamic subjects such as; healthier food and special diets, menu planning, food and beverage service skills along with customer service within the hospitality, travel and tourism industries. You will attend visits to hotels and restaurants and other businesses operating within the catering and hospitality industry and have ample opportunities for work experience, giving you further insight into the sector. You will gain essential experience using Edinburgh College’s industry connections and exceptional facilities. This course includes a French exchange programme and will provide you with the skills, knowledge and attributes that are essential for a successful career in the catering and hospitality industry.

  • Legislation in food and beverage service
  • REHIS Elementary Food Hygiene
  • Prepare and cook a variety of poultry, meat, fish, stocks, soups, sauces, vegetables, pasta/grains and fruit dishes
Placement Information
-

  • Although there is not a mandatory work placement for this course you are recommended to seek work experience within the catering/hospitality industry to support your studies. Your course tutor can assist you in finding suitable work experience. 

Entry Requirements
-

  • City and Guilds Level 1 or equivalent  
  • You will also be considered if you have relevant industry experience or have completed a related course at an introductory level 

 

English Proficiency Requirements

  • IELTS 5.5
How the course is assessed
-

  • There will be a series of short practical exams throughout the course 
  • You will also complete a five-hour practical exam

  • You will be invited along to an information session and interview to assess if this is the correct course for you

  • SVQ in Professional Cookery at SCQF level 6
