Course Overview

This is a 6-month course (from August to January) and is ideal if you are looking to start your career within the Hospitality/Cookery Industry – it will give you the opportunity to try out both Cookery and Front of House operations before deciding on your career path.


The course will introduce you to a variety of techniques needed to work in a professional kitchen and front of house – you will develop your skills in areas such as:


  • Food and beverage service skills
  • Kitchen skills
  • Food hygiene
  • Working as part of a team

  • How to handle and operate kitchen equipment
  • Health and safety within a kitchen environment
  • Cookery processes
  • Training in a realistic working environment

  • Barista skills
  • Time management















Placement Information
  • There is no mandatory work placement on this course but you are encouraged to seek work within the industry to enhance your skills and confidence.


Entry Requirements
  • You must be able to work at SCQF Level 3
  • Have an interest in working within the hospitality industry  
  • Demonstrate good communication skills.



English Proficiency Requirements
  • IELT's 5.5
How the course is assessed



  • Project work
  • A range of practical activities and assessments





Information on Test/Auditions/Interview Requirements
  • You will attend an interview (online due to covid restrictions) 

  • A practical induction session in June 

Progression And Articulation Routes
  • January start NPA in Professional Cookery at SCQF Level 3


Career Opportunities


  • Kitchen assistant
  • Front of house within a coffee shop/cafe
  • Progression to C&G Level 1 Professional Cookery or Culinary Skills
  • Progession to NPA Bakery SCQF level 4
