Course overview

The Elementary Food Hygiene course is for anyone who handles, prepares, or serves food in the catering industry. By law, all food handlers must understand the principles of food hygiene and know how to work safely to protect the food they serve from contamination.

This course informs you of your legal responsibilities and what constitutes best practices for controlling food safety hazards, temperatures, food storage, food preparation, personal hygiene, and premises cleaning.

What you will learn

  • Recognise the consequences of poor food hygiene and safety, and the principles of food safety management systems.
  • Identify food safety hazards and recognise how to prevent food contamination.
  • Explain safe food preparation and storage practices.
  • Outline the importance of personal hygiene, effective cleaning practices and pest control.
  • Explain your own and others’ responsibilities for food hygiene and safety in line with food safety law
